Family Recipe Friday - Mamaw's Italian Chicken

Jessie at Vanderbilt Wife is hosting Family Recipe Fridays and I thought I'd jump in this week. Be sure and head over for some more great recipes from some more great bloggers!


This has been a favorite on my Dad's side of the family for as long as I can remember. Jason loves this recipe, as do I, and we have it for dinner about once a month, if not more. I'm doing this on the fly and going to give you the recipe from memory.


Mamaw's Italian Chicken

Ingredients:

2-3 lbs. chicken (I use boneless, skinless chicken breasts)
1 cup black olives, sliced
about 18 cherry tomatoes, halved
1 packet onion soup mix
8 oz. Italian salad dressing
8 oz. white wine (you can substitute water)
1 tsp. dried oregano
2 bay leaves
salt and pepper

Preheat oven to 350F. Sprinkle chicken with salt and pepper. Place chicken in a 9x13 inch baking dish. Spread other ingredients evenly over chicken. Bake for 45-55 minutes or until chicken juices run clear.

This can also be done in the crock pot. Follow above directions in crock pot instead of baking dish and cook on low for 8 hours or high for 4 hours.
